Razor clams are a true Pacific Northwest delicacy. Here is Ann's family recipe and my favorite way to eat Razor Clams.
Ann's Family Recipe for Razor Clams
Prepare
Blend saltine crackers, and light seasonings. Place the blended saltines in a pie dish.
Blend 2 eggs and milk and place mixture into a bowl. ( sorry, we forgot to take a picture of the egg/milk wash in the bowl)
Fill a separate pie dish with "Pride of the West" batter mix and light seasonings
Make sure all your razor clams are clean, thawed and ready to cook.
2. Coat
First, coat the clam in pride of the west seasoning
Second, dip clam in egg/milk wash.
Third, coat the clam in the blended saltine mix
Place prepared clam on a cookie sheet
Coat all clams before cooking
3. Cook
Heat generous amounts of olive oil and butter in a cast iron skillet
(Olive Oil keeps the butter from burning)
Cook clams for 1 to 2 minutes per side until they are golden brown
4. Serve
Clams are best served with a homemade Caesar salad for an amazing Pacific Northwest Meal! I will do a future blog post on Ann's famous Caesar Salad Recipe .
